Local Hero Column featuring Cynan Jones, who cultivates gourmet fungi under relatively sanitised conditions to make a living; at the weekend he relishes getting his hands dirty in the woods at Beddgelert, North Wales, to seek out wild mushrooms. He cultivates 100kg a week of organic shiitake, oyster, chestnut and field mushrooms, 90 per cent of which are sold to hotels and restaurants in Wales. Leftover mushrooms are dried or pickled at a nearby factory, the latter work well as an antipasto
