Wild / Gwyllt

During the right time of year, mostly late summer through to autumn we can deliver a range of wild mushrooms such as Chanterelle, Porcini, Hedgehog or Chicken of the Woods. Please note that gathering wild mushrooms can be extreamly dangerous unless you are fully competent and confident. Here at The Mushroom Garden, we can advice you!!

Shiitake Mushroom

Shiitake were our first mushroom, and are still the most popular choice with Chefs and our customers. The rich fleshy taste makes Shiitake an excellent replacement for meat in vegetarian meals and work wonders in sauces. Shiitake Mushroom

Dried Shiitake

We also preserve our mushrooms by dehydrating them. This process causes the mushrooms to loose about 80% of their weight. after soaking in warm water for about 20 minutes they rehydrate. The water can then also be used as an excellent base for a stock or sauce.

Tips and ideas

Our favorite way to serve Shiitake is to make a Crostini: Take a slice of fresh bread and lightly toast, fry finely chopped shiitake in butter with some herbs and season. Rub the toast with a slice of garlic, place Shiitake mixture on top and enjoy!!
